This Oatmeal Carrot Cake is super easy to make, and with its delicious mix of carrots, nuts, and dried fruits, it’s a great treat to enjoy regularly!Ingredients (Serves 8-10):Carrots: 4 medium (200 g), gratedOrange Zest: From 1 orangeEggs: 3 largeSweetener: Optional, to taste (erythritol, stevia, or sugar)Vegetable Oil: 80 ml (1/2 cup)Walnuts: 1 cup, chopped (reserve some for decoration)Almonds: 1/2 cup, choppedDried Apricots: A small handful, rinsed and driedPlums: A small handful, rinsed and driedOatmeal: 1 cupBaking Powder: 10 grams (2 teaspoons)Salt: A pinchCinnamon: To tasteNutmeg: Optional, to tasteVanilla Extract: 1 teaspoonInstructions:Preheat your oven to 180°C (350°F) and grease a loaf pan.Prepare the ingredients: Grate the carrots and zest the orange. Chop the walnuts, almonds, apricots, and plums.Mix the wet ingredients: In a large bowl, beat the eggs, then add the vegetable oil, vanilla extract, and sweetener (if using). Stir well.Combine the dry ingredients: In a separate bowl, mix the oatmeal, baking powder, salt, cinnamon, and nutmeg (if using).Combine both mixtures: Add the grated carrots, orange zest, dried fruits, and nuts to the wet mixture.
