2 cups mixed fresh fruits (strawberries, blueberries, apple slices, or pear)
2 eggs
1 cup low-fat milk or unsweetened almond milk
2–3 tbsp Greek yogurt (unsweetened)
1–2 tbsp stevia or monk fruit sweetener (adjust to taste)
1 tsp vanilla extract
¼ tsp cinnamon (optional)
Pinch of salt
👩🍳 Instructions
Preheat your oven to 180°C (350°F).
Lightly grease a small baking dish or ramekins.
Arrange the fresh fruits evenly in the baking dish.
In a bowl, whisk the eggs until smooth.
Add milk, Greek yogurt, vanilla extract, sweetener, salt, and cinnamon. Mix well until fully combined.
Pour the custard mixture over the fruits.
Place the dish in a larger pan filled with hot water (water bath method) to ensure gentle baking.
Bake for 30–35 minutes, or until the custard is set but slightly soft in the center.
Remove from the oven and let it cool for a few minutes.
Serve warm or chilled.
